Chocolate Chip Cookies, Almond & Semolina

Cream fat & sugar(use paddle with mixer on medium):

1 cup (2 sticks) margarine, blend to creamy
1 cup sugar, light brown
½ cup sugar, granulated (mix both sugars, and cream with margarine)

Mix wet ingredients:

2 ea eggs, whole
1 tsp vanilla extract
1 tsp almond extract
2 tbs milk

Add this mixture slowly to creamed margarine & butter.

Mix dry ingredients:

1 cup flour, all-purpose
¾ cup flour, almond
¾ cup flour, semolina
1 tsp baking soda
1 tsp salt, Kosher (or sub ½ tsp iodized salt)

Place in stopped mixer and turn on low with piece of plastic film. Mix on low until just mixed and add mixins…

“Mixins”:

1  cup chocolate chips, white or dark or sub: toffee chips
½ cup slivered or sliced blanched almonds
½ cup raisins, gold or sub: craisins

Drop about 2 tbs per cookie onto silpat or papered sheet pan. Bake 350F 10-12 minutes, turning once for even browning.
