Mixed Bean Salad
Yield: Serves 8
Serving Size: 3/4 cup
Ingredients:
- 1 can (15 ounces) green beans, drained and rinsed
- 1 can (15 ounces) wax beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15ounces) garbanzo beans, drained and rinsed
- 1/4 chopped white onion
- 1/2 cup cider vinegar
- 1/4 cup orange juice
Directions:
- Combine the beans and onion, mix evenly.
- In a separate bowl, mix orange juice and vinegar.
- Pour orange juice mixture over bean mixture and stir to coat evenly. Let stand 30 minutes before serving.
